1/2 cup organic soy milk
1 cup, packed (2 large handfuls) organic power greens (spinach, kale, chard, mizuna)*
2 scoops organic whey or vegan protein powder
1 cup organic fresh or frozen berries
5-6 fresh organic berries for topping
1 tbsp organic flake coconut
1/2 tsp organic chia seeds
*Many grocery stores carry greens already mixed, in their lettuce section, or you can make your own combination if you like.
In a blender or food processor, pulse the first 2 ingredients until greens are finely chopped.
Add remaining ingredients and blend until smooth.
Spoon into a bowl and top with remaining 3 ingredients.
Don’t let the greens in this bowl scare you. It’s actually sweet, yummy, and a great way to add extra veggies to your diet. It comes out as a pudding consistency and makes a healthy breakfast or snack for kids and adults alike!
