4 salmon fillets (6 oz each), skin removed
1 tbsp olive oil
2 tbsp dark brown sugar
1-1/2 tsp sea salt
1 tsp ground black pepper
1/2 tsp ground cumin
1/4 tsp mustard powder
1. Mix together sugar, salt, pepper, cumin, and mustard in a small bowl. Press sugar and mustard mixture onto top of each fillet (the side that didn’t have skin).
2. Heat oil in a large non-stick pan or cast iron skillet over medium heat. When hot, place fillets rub-side down in pan. Cook approximately 3 minutes, until rub darkens slightly. Turn fillets over and cook 1-2 more minute, or until medium doneness.
