2 tbsp minced yellow onion
2 tbsp chopped celery (about 1 stalk)
1 tbsp pickle relish (optional)
1/4 cup organic mayonnaise
1 – 7.5 oz can wild caught sockeye salmon, including skin (my favorite is from Trader Joe’s)
Mix all ingredients well in medium size bowl and serve over a bed of lettuce or mixed greens.
