This is a wonderful summer salad or any time you’re able to get home grown tomatoes. Enjoy!
4 medium tomatoes, sliced or cubed; or 1 pint cherry tomatoes, halved
1/4 cup Vidalia onion, thinly sliced
1/4 cup cucumber, chopped (optional)
1 avocado, peeled, pitted & cubed
1/2 cup feta cheese, crumbled
1 tbsp fresh parsley, chopped
1/4 cup olive oil-based dressing
In a medium bowl, combine tomatoes, onion, cucumber, and avocado.
Add crumbled feta and parsley.
Gently stir in olive oil dressing.
